As a regular visitor to Mu Dan-Ting Chinese resturant in Nagoya City, I had the chance to sit down and chat with the owner and chef, Mr. Wang Yi Long.

Can you tell us a bit about yourself, where your from, and how long you have been in the resturant business?

I was born in Jinzhou, China, but have been in Japan for over 12 years. I worked in hotels in China, and then in resturants in Tokyo before coming to Nagoya. We opened Mu Dan-Ting four years ago.

What kind of food is served at Mu Dan-Ting?

We serve a variety of traditional tasting Chinese dishes.

Is it difficult serving Chinese tasting dishes to Japanese customers? That is, do you have to change flavors to suit local customer preferences?

|
My perspective is that if you change the taste the dish no longer has any meaning. We feel that as everyone likes meat for example, if you prepare good tasting meat dishes than they can be enjoyed by everyone. Delicious is delicious regardless of culture.

Who are the majority of customers?

As we are near the unversity we have a lot of students and professors that stop in for lunch or dinner. We have a lot of Chinese exchange students looking for tastes from home as well.

What is the best selling item on your menu?

One of the most popular is a stir fry with pig intestines.

What is the most difficult thing about running a resturant here?

|
We serve a wide variety of dishes using a lot of different ingrediants. It provides the customers with a lot of choice, but it is difficult from the cooking and mangement side.
